We can do much more
I watched a clip from the movie "facing the giants" during the extreme coaching training. It was a scene of how the head coach guides and urges each one of his players to give maximum effort, and motivates them to believe they can win.
I, too, believe that if we treat an individual as he is, he will stay as he is. But if we treat him as is he were what he ought to be or could be, perhaps he will become that. We can all do much more than we think, but 1st we have to believe it.

Plants Galore
At some point of the game, you would receive a Almanac. It shows you every plant and zombie that you have seen. You can use the Almanac by clicking on it on the main menu or before starting a level. Here are every single plant in the game:

The Zombies go Down
Once you get enough plants, you would need to choose which plants you want to plant.
Also, on the right side of the screen, you will see which zombies you will encounter in the level.
You start with 5 plant-slots, but as your adventure progresses, Crazy Dave will offer you extra slots.

You will want to get up to 8 slots as soon as possible, but the 9th can wait (just because it's sooo expensive). I haven't even got it yet. If you're running short on money for the 8th slot, and you most likely will, you can try and play mini-games to gather some extra money.
When deciding your arsenal, you first need to select the basics. You need a sun-producing plant, a cheap attack plant (you need them for the start of the level), and I would advice to choose at least one life-saver, such as a Cherry Bomb or Jalapeno (it is perfectly ok if you don't have the Jalapeno) that can provide a last defense.

If you are going to get a Digger zombie , don't forget to get a split pea or a magnet, while the Balloon zombie will require either a Cactus or a Blover. The rest of the slots, you can fill with your favourite plants, depending if you like to play it agressive or defensive. Personally, I like combining repeaters with torchwood, but each player may have their own preference. I might even upgrade them to a gatlling pea. I also like Wintermelons and Cob Canons.

On the start of the second level, you will be rewarded with 'Sunflowers', which give you extra sun. My advice is to start with 3 sunflowers and plant more after that.
Now, a zombie approaches. What do you do? Use your additional sun to help you plant a peashooter, which will help you kill the zombie. This image should help you:
